Avocado Burger & Potatoes

This new avocado burger and potatoes recipe is sure to be a crowd pleaser.

You can spice it up with a hot salsa or pico de gallo like I did or tame it down with just seasoned tomatoes for a fresher approach. Either way your sure to devour this meal along with your friends or family.

Ingredients 

  • 96/4 Lean Ground Beef

  • 1 Avocado

  • 1 Cup of cherry tomatoes

  • 1 Pound of new potatoes

  • 1 Tablespoon of butter

  • 1 Tablespoon of olive oil

  • Parsley to taste

  • Salt and pepper to taste

  • (Optional) Hot Pico De Gallo or Salsa of Choice

Instructions

Form the 96/4 beef patty's into 3 round circles. Each will weigh about 4.5 ounces after cooking. Heat a pan with 1 tablespoon olive oil on medium heat. Once the pan is hot add the burgers. For medium rare each burger will cook about 5 minutes on each side. 

While the burger is cooking I cooked the new potatoes in the microwave. I have a potato setting on my microwave but if you don't you can just put them in for 5-6 minutes or until tender with a fork. 

Take the potatoes out and cut them into quarters. Take 1 tablespoon of butter and thoroughly mixed it to coat all the potatoes. Next sprinkle parsley, salt, and pepper to taste. 

Once the burger and potatoes are done, you can quickly cut your avocado into 3 sections for each burger. Then chop your grape tomatoes. 

Finally, assemble the burger with avocado, tomatoes and salsa on top. The potatoes will go to the side of the burger.
